AFRICAN BOBOTIE









AFRICAN BOBOTIE
...a great traditional African food recipe to try ! Nice one !

INGREDIENTS
  • 3 slices day old bread
  • 1 1/2 c. milk
  • 2 med. onions, chopped
  • 1 garlic clove, minced
  • 1/2 c. slivered almonds
  • 1/2 c. raisins
  • 1 tbsp. sugar
  • 1 tbsp. salt
  • 1 tsp. curry powder
  • 1/8 tsp. pepper
  • 1 tsp. vinegar
  • 1 tsp. lemon juice
  • 1 1/2 lbs. ground beef
  • 2 eggs
INSTRUCTIONS
Soak bread in milk. Squeeze milk from bread, reserving milk. Combine all ingredients, except milk and 1 egg. Press mixture into an 11 x 7 inch baking dish. Add enough milk to reserve milk to make 3/4 cup.
Beat together milk and remaining egg. Pour over meat mixture. Bake, uncovered, at 350 degrees for 1 hour or until golden brown and firm to the touch. 6 servings.

INGREDIENTS
  • 3 lg. onions, sliced
  • 1 clove garlic, minced
  • 1 tbsp. chopped fresh ginger
  • Seeds from 3 cardamom pods, crushed
  • 1/2 tsp. cinnamon
  • 1/2 c. butter
  • 1/2 c. cooking oil
  • Juice from 6 limes
  • 1 c. sour cream
  • 1 tsp. salt
  • 2 c. yellow rice

AFRICAN BEEF STEW

AFRICAN BEEF STEW ...try this great African food recipe....nice !

INGREDIENTS
STEW:
  • 1/2 c. chopped onion
  • 1 c. tomato juice
  • 1 c. (canned) beef stock
  • 2 lbs. round steak, trim and cut in 1 1/2 inch cubes
  • 2 tbsp. vegetable oil
  • 1 (8 oz.) can tomato sauce
  • 1/2 tsp. curry powder
  • 1 tsp. minced fresh ginger
  • 6 drops Tabasco
  • 1/2 tsp. salt or to taste

INSTRUCTIONS
Heat oil, add stew meat brown well. Remove from pan, add onion to drippings and stir fry until soft. Return meat, add curry powder, ginger and salt. Stir fry one minute, add the rest of the stew ingredients. Bring to a boil, reduce heat to simmer, cover and cook tender 1 1/2 to 2 hours.

INGREDIENTS
RICE:
  • 1 tbsp. vegetable oil
  • 1 clove garlic, halved
  • 1 c. uncooked rice
  • 1 c. water, hot
  • 1 c. beef stock, hot
  • Salt to taste
GARNISHES:
  • 1 (8 oz.) can pineapple chunks
  • 1 jar chutney
  • 1 c. peanuts

INSTRUCTIONS
In heavy pan with a lid, heat 1 tablespoon vegetable oil, add the garlic clove. Cook turning until golden. Do not burn. Remove garlic, discard. Add rice to garlic oil, stir to coat and stirring
frequently, cook until golden. Add hot water and stock, add salt.
Bring to boil reduce heat to low. Cover and cook about 20 minutes until liquid is absorbed and rice tender. Keep warm until ready to serve. Serve garnishes in small bowls on the side. The African food recipe is ready to serves 4 to 6 persons. Nice one ! Enjoy it !

AFRICAN APRICOT CHICKEN ON SKEWERS ...a nice African food recipe to try !

INGREDIENTS
  • 3 lbs. boneless chicken breasts, cut into 4 inch chunks
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 4 med. onions, finely chopped
  • 2 tbsp. oil
  • 1 1/2 tsp. coriander
  • 1/2 tsp. cumin
  • 1 1/2 tsp. hot curry powder
  • 1 tbsp. brown sugar
  • 1/2 c. fresh lemon juice
  • 4 tbsp. apricot jam
  • 2 tbsp. flour
  • 30 dried apricot halves
  • 1 onion, cut into 2 inch squares
  • 2 bay leaves

INSTRUCTIONS
In a large bowl, combine chicken pieces, garlic, salt and pepper; set aside.
In a medium frying pan, fry onions in oil until golden. Stir in coriander, cumin and curry powder. Stir to coat onions, then add brown sugar, lemon juice and jam. Add 1/2 cup water. Bring to a
boil, stirring constantly. Remove from heat. When cool, pour over chicken. Add bay leaves and refrigerate overnight.
The next day, thread meat with onions and apricots on skewers. Grill over coals or broil in oven (7 minutes on each side). While meat grills, remove bay leaves from marinade and transfer it to a heavy pot. Bring to a boil. Serve over rice... and the African food recipe is ready to serves 6 great persons....enjoy !

AFRICAN CHICKEN ....a nice African food recipe to try !

INGREDIENTS
  • 4 lb. chicken pieces
  • 1/4 c. vegetable oil
  • 1 tsp. salt
  • 1 tsp. curry powder
  • 1 lg. onion, peeled and sliced
  • 1 lg. sweet red pepper, cut in strips
  • 1 lg. onion
  • 1 lg. sweet red pepper
  • 1 lg. tomato
  • 1 1/2 c. uncooked rice
  • 1/4 c. crunchy peanut butter
  • 1/4 c. warm water

INSTRUCTIONS
Brown chicken in vegetable oil in large frying pan. Set aside.
Remove all but 2 tablespoons of oil and drippings in pan. Stir in curry powder and salt. stir in onion, red pepper, and tomato. Cover and simmer 5 minutes. Return chicken to pan. Cover. Simmer until chicken is tender. Remove chicken to large platter. Blend peanut butter and water. Stir in vegetables. Heat to boiling. Spoon over chicken. Peanuts are common in the African cuisine....and the African food recipe is ready to serve....enjoy it !.

NORTH AFRICAN MECHOUI
A great STYLE LEG OF LAMB ...nice African food recipe to try ! Great one !

INGREDIENTS
  • 1 (4 lb.) boneless leg of lamb
  • 2 cloves garlic, slivered
  • Juice of 3 lemons
  • 3 tbsp. peanut oil
  • 3 tbsp. olive oil
  • 2 tsp. cayenne pepper
  • 1 tsp. paprika
  • 2 scallions, minced
  • 1 tsp. salt
  • Freshly ground pepper to taste

INSTRUCTIONS
Using a sharp, small knife, make 10 small slits in lamb. Insert garlic into slits. In small mixing bowl, mix remaining ingredients.
Rub roast with half the marinade. Let sit 30 minutes. Heat oven to 450 degrees. Place roast on rack in shallow roasting pan. Sear in hot oven 10 minutes. Reduce to 350 degrees; cook 10 minutes/per pound for rare; 15 minutes/per pound for medium; 20 minutes/per pound for well done meat. When lamb is cooked to desired doneness, remove roast to a warm platter. Skim off as much fat as possible from pan drippings, the stir in remaining marinade until blended.
Place pan on range top burner - over medium high heat. Stir and simmer 1 to 2 minutes. Transfer sauce to gravy boat or bowl. The African food recipe is ready to serve over roast as dripping sauce....nice ! Enjoy it !

AFRICAN SPINACH AND PUMPKIN

INGREDIENTS
  • 1 lb. spinach
  • 1 lb. ground beef
  • 1 sm. pumpkin
  • 2 onions, sliced
  • 1 tbsp. fat
  • 2 tsp. salt
  • 1 tbsp. flour
  • 2 c. water

INSTRUCTIONS
Brown meat and onions in 1 tablespoon fat. Add 1/2 cup water. Peel pumpkin and cut into cubes. Steam pumpkin and mix with meat. Chop spinach, cook and mix with the remaining ingredients. Add salt and boil until mixture thickens. Serve with boiled potatoes. The African food recipe is ready to serve....nice !
